Get To Know The Chef - Dan Smith.

Who? Dan Smith - Head Chef, The Peacock, Roswley

1) When did you first realise that you had an interest in cooking?

"From a very early age I come from a family with a large interest in food ,my grandparents, aunties and uncles owned allotments and grew all their own vegetables and everybody cooked"

2) When did you first start working in a professional kitchen?

"From the age of 14"

3) What's your favourite dish to cook?

"I don’t have a favourite dish to cook I just enjoy cooking whatever food is in season"

4) Are there any particular ingredients that you like to use and why?

"Being where we are it’s a privilege to have such good quality produce on our doorstep, and it’s always nice to cook meat that comes off the estate"

5) What's your perfect comfort meal?

"My perfect comfort food would be Sunday lunch with the family or a good BBQ with beer"

6) What's the best piece of advice that you've been given by a fellow chef?

"Work hard and don’t try to progress to quickly without learning the basics"

7) What do you consider to be the most important piece of equipment to have in the kitchen?

"A good sous chef !!"

8) If you hadn't become a chef, what would you like to have been doing as a career?

"I can’t image doing anything else that I have the same level of enjoyment or passion for"
